Prerequisite: a mature sourdough starter (check out our introduction to sourdough bread making class).

To be able to follow the steps of the instructor, make sure you have a mature and active sourdough starter for the beginning of the class.
I'm Pascal the Baker. I grew up in France and of course, we had a bakery on every street corner. I can still remember the smell of delicious fresh baked bread from the nearby bakery, without even seeing it. It was obvious that country bread was (and still is) a daily staple that no-one questioned.
15 years ago, I moved to California. I yearned for high-quality bread and went on a quest to find a bakery in the area. It was such a challenge that I decided instead to try baking my own artisan loaf at home. It was a game-changer for me!
Many years later, I discovered that sourdough bread brings many other health benefits beyond its delicious taste.
In this class, I'll be sharing some of the knowledge I acquired along the way.
